We chatted to sisters Tor and Lucy who established the company in December 2010, to find out more about them and what they do.

"Hi Tor and Lucy, can you tell us a bit about your background and how you came to found The Cornish Food Box? What inspired you to start the business?"

We are both very proud Cornish girls having grown up on our family farm near Porthleven in West Cornwall. Many of the family farms of our childhood have now gone either becoming holiday accommodation or having diversified into other businesses. We wanted to start a business that made it really easy for people to buy local food, support our rural economy and have a positive impact on the county we love.


"Why should someone buy locally sourced food, rather than maybe some of the stuff from the big supermarket chains, what’s the big difference?"

For us the big difference is knowing you’re supporting independent family run businesses – essentially supporting people with a real passion for what they do. The food we sell is produced with love and care by people who put everything they have into making sure the products are the best they can be. Local food is fresher, tastes better and gives you a real flavour (quite literally!) of the community you are staying in.


"Do you use sustainable food packaging?"

Yes 100%! We deliver Cornish food and drink all over the UK so have different packaging for different delivery methods which vary depending on whether we are delivering the box but everything we use is paper so can be recycled or composted.

"You’ve got some fantastic produce here, tell us about what are some of your favourite items."

Oh, there are so many! It’s really hard to choose, but our Breakfast Boxes are fairly hard to beat as they are stuffed full of amazing local produce and really set you up for the day (or several days depending on the size you order!). We also sell some wonderful and world renowned cheeses which have recently featured on the menu at the G7. If you have a sweet tooth then Chocolarder Seasalt Caramel Truffles are actually one of the nicest things men has ever created! There is so much available here in Cornwall and it changes all the time with the seasons – sometimes a simple supper of fresh greens and pan fried Cornish Hake can’t be beaten!


"Can you give us the biggest reason that people should be buying locally sourced food?"

For us it’s to support the people behind the produce. The people who make your food with passion and care. They are the really knowledgeable people! When you buy from a supermarket, it’s a really disconnected shopping experience – you really have no idea where your food is coming from, and who has made it. When you buy local produce, you are buying into the community and supporting food producers who work incredibly hard year round to supply high-quality food with the very best animal welfare.


"Is there a minimum spend?"

We have a minimum order of £25 + Delivery. If you spend below this amount the delivery charges are slightly higher. You can arrange a collection from our Redruth warehouse – there is no minimum order for collections.

"Do you deliver all over the country?"

Yes, we deliver all over the UK every week and even internationally by arrangement. We are doing our best to get Cornish food to take over the world!!

"When you get time to relax, what do you like doing?"

Tor is really into cold water swimming and goes most mornings early before the beaches get busy, as well as discovering new swimming spots in West Cornwall. She enjoys spending time with her family and making the most of the beautiful place we are lucky enough to call home. Lucy spends a lot of time painting and making pots as well as out with her family and dog Gili!


"Your favourite spot in Cornwall?"

This is a hard question!! There are so many but because we grew up ‘down west’ then I guess all the favourite spots are down that way. Prussia Cove is stunning, Sennen, a beer at the Mussel Shoal or Ship Inn in Porthleven while the kids jump in the harbour but also one of our favourite places to take the children at low tide is Portholland on the Roseland. Not many places beat a pizza at Sam’s on the Beach at Polkerris as well.

"Do you have a recipe using some of the fabulous local produce that you like to prepare?"

When using local produce is has to be simple to allow the flavours to really speak for themselves.


HOMEMADE HAKE FISH FINGERS WITH HASSLEBACK POTATOES & SEASONAL GREENS

This is a favourite recipe in Tor’s house and one the kids can help to make. It works with any fish really. Although a beer batter is better when cooking flat fish like plaice, we use breadcrumbs to coat the hake which is SO delicious at this time of the year.

YOU WILL NEED:

  • 1 egg, beaten; plain flour;
  • 85g white breadcrumb, made from day-old bread;
  • 400g skinless sustainable white fish like hake, sliced into 12 strips;
  • salad potatoes,
  • salt and pepper
  • and seasonal greens from your veg box.

TO MAKE:

  1. HASSELBACK POTATOES: These look great and are so easy to make. Pre heat the oven to 200.
  2. Slice across the potatoes in 0.5cm strips so it looks as though the potatoes have got strips. I put one in the other direction across the middle as well. Coat in olive oil, Cornish seasalt and ground black pepper – give a good shake and pop them in the oven for 20 minutes. Check regular and give a shake so they remain coated with oil. After 20 minutes or so they will be crispy on the outside and lovely and fluffy inside!
  3. FISH FINGERS: Beat the egg in a bowl and put the flour and breadcrumbs in separate bowls. Coat the fish in the flour, then egg and finally coat with breadcrumbs.
  4. Once they are all done, heat vegetable oil in a large frying pan. I put enough oil to shallow fry the fish.
  5. Place the fish in the hot pan in batches and cook until golden brown on each side. Add more oil as necessary. Take the fish out and put on kitchen roll to soak up any oil.
  6. GREENS: Take a selection of greens and steam them very simply.
  7. Serve and enjoy!
